Sourdough Baking Course – riot rye pain de campagne

Joe has been baking traditional sourdough breads for over 20 years and has taught thousands of people sourdough baking in the Riot Rye Bread School. He has distilled his extensive knowledge for this course, in order to teach you the fundamentals which underpin every great sourdough loaf.

If you’re a beginner or have a little of bit of experience with sourdough or are struggling with sourdough, this course will give you the understanding and confidence to bake great sourdough bread at home.

If you’re already baking sourdough regularly, this course will deepen your understanding of sourdough baking, expand your repertoire of techniques and give you the confidence to start creating your own recipes.

We have designed different learning options.

Course dates: Saturdays – 20th February (sold out) and 20th March (places available).

Sourdough Course Level 3

Fully prepped & supported! €125

This is an extended learning format where we engage with you over the course of a month to ensure that you have everything you need to bake sourdough, from equipment, ingredients and sourdough starter, through to time to absorb and consolidate the information that we give you, practice your baking and ask questions.

2 weeks before the course we will courier you

  • fresh organic sourdough starter and instructions for maintaining it
  • all the organic flour you’ll need for 3 bakes of the recipe
  • a recipe booklet
  • a dough scraper
  • a probe thermometer
  • an oval banneton (proving basket)
  • a 3.5Ltr pyrex dish
  • double-sided razor blades (to score your breads) VERY SHARP!
  • any other extra baking equipment you have ordered for the course
  • the delivery charge will be added at checkout. Please note we can currently only deliver to the island of Ireland.

2 weeks before the course we will email you

  • a list of all the kitchen equipment you’ll need on the day of the 3-hour course

Friday evening before the course, 7.30-8pm

  • live zoom check-in to make sure you’re ready to bake!

10am-1pm Saturday, 3-hour live bake-along class (dates available when you purchase the course)

  • You will bake along with Joe and he will also answer any of your baking questions. Julie will facilitate the class.  We are working with a professional multi-media company to ensure high quality production.

2 live 1-hour follow-on group support sessions (dates available when you purchase the course)

  • with Joe and Julie to track your progress and assist you in your learning.  Joe will answer your baking queries and admire your loaves!
  • 15 participants per session, 30 places available per course
