Is a rustic flour, produced from wheat grown locally to Shipton Mill. It took the millers at Shipton Mill years to perfect this flour, which crosses the divide between a traditional stoneground wholemeal and a modern white bread flour.
The flour is delivered from Shipton Mill in branded sacks without the words “strong” or “plain” on them but its qualities are identifiable by the use of “11%” printed on the side. This refers to 11% naturally occurring protein in the wheat.
With a protein content of 11% this flour is perfect for long fermentation sourdoughs and yeasted breads.
This flour is stoneground where the wheat is ground through French Burr stones and then lightly sifted to remove any of the larger brain fractions. This age old process produces a flour that is both packed with flavour and delivers results for your bread with volume and crumb.
