This hands-on class is suitable for people who have completed our Starting Sourdough Class, as well as for those who have some experience baking sourdough breads.

  • 8 places, €149 (incl. VAT) per person, 10am-6pm, 1-day class

You will learn:

  • how to use cooked Irish whole grains (eg rye, oats, barley) in your sourdough bread to create the softest, lightest, most delicious, and highly nutritious sourdough loaf to suit all the family
  • how to make a flavoursome Malthouse Sourdough bread with a wheat levain
  • how to increase your understanding of wheat sourdoughs for the best flavour and fermentation
  • how to best maintain a vibrant sourdough starter
  • how to incorporate Irish grains and flours into your baking
  • how to focus on temperature and gluten strength to maximise the volume and lightness of your breads whilst ensuring a full flavour and consistency
  • how to use baker percentages to create and regulate your own recipes
